This Coffee Canister Rocks!

Ok, so you know you are a coffee geek when a stainless steel canister gets you excited! However, before you slap a geek tag on the bald guy, let me point out that these canisters have a Co2 gas release valve built in! I told you these things rock.

Here is how it works…

Coffee, when roasted, produces Carbon Dioxide. After several hours, the carbon dioxide creation slows down. What we want to avoid is an over abundance of Co2 because it can permeate the beans and flatten the flavor profile. By placing the coffee into the canister the carbon dioxide produced by the beans slowly replaces the oxygen in the canister.

Carbon Dioxide being heavier than air lies low in the can pushing the Oxygen rich air out the filter at the top, any overabundance of Carbon dioxide is also pushed out the filter. Since pressurized systems strive for equality, the carbon dioxide never gets thick enough to permeate the beans, while the oxygen won’t flow back in for the same reason.

An Anaerobic environment means the coffee stays fresher, longer…perserving the varietal characteristics of your coffee.
